Spiralize or Bust….Fresh Zucchini Noodle Salad

Awwww…..the Spiralizer! My mother’s day gift. It is revolutionizing our food around here.

When I took the Isagenix plunge in September it became clear to me that my diet was heavy on simple cards….wheat and gluten in general….and they make me feel and act like a slug…among other things. (Not interested in an argument about gluten. It doesn’t treat the body good, end of story.)

But who doesn’t like noodles?

Spiralizer to the rescue. It’s simple, fast and fun!

This first recipe has been a huge hit!

The Goods:

  • 2-3 Medium Zucchini
  • 1 Medium Red Onion
  • 1 Cup Sliced Cherry Tomatoes
  • 1/4 Cup Chopped Parsley
  • 1/2 Cup Crumbles Feta Cheese
  • 1 Tablespoon Freshly Squeezed Lemon Juice
  • 1 Tablespoon Good Quality Olive Oil….cheap olive oil tastes bad…if it is in a clear glass bottle you can assume it is cheap….and will taste bad
  • Salt and Pepper

Spiralize or shred, if you don’t have a spiralizer, your zucchini. Place your noodles in a strainer and sprinkle with salt to help draw the water out.  Let sit for 20 minutes. Squeeze gently to get as much water as possible.

Spiralize your red onion. Throw everything in a bowl and chill for at least two hours. Stir before serving.
